Mini Jammie Dodgers
These viennese piped butter biscuit sandwiches filled with raspberry jam and topped with icing sugar make great food gifts, party food or petit fours. They can also be filled with chocolate cream or dipped in chocolate for a variety of flavours.  I have used a cookie gun for this recipe, but you can also use a piping bag.

Makes 20 sandwiched biscuits

Cookie Dough
110g softened butter
50g icing sugar
1 egg yolk
1 teaspoon vanilla extract
150g plain flour
25g cornflour
1/2 teaspoon salt

Filling & Decoration
4 tablespoons jam
icing sugar for dusting

Chocolate Filling
100ml whipping cream
2 tablespoons icing sugar
50g dark chocolate (70% cocoa)

Dipped Biscuits
50g melted milk chocolate


1- Preheat the oven to 180 C / Gas 4.
Tip These will keep for 3 or 4 days in an airtight biscuit tin.  Great for making ahead of the big day!
